Today I wanted to share with you something that has been a long time coming. My father and I had several things in common. My favorite past time when I got a little older was, over our morning coffees, we'd finish the daily crossword puzzle together. It was his love of reading that I really miss! He'd always have a book in his hand! What I remember most about my dad was

To be honest, I don't remember my mother ever using it!
He'd make us one of his famous ham and cheese omelets in it!
Confession time....
I've had one, I just never use it!
That is until, I had this need for chocolate!
It's been a busy couple of weeks,
and I haven't really made anything sweet, since the
A few other family things have been going on in the background,
my grandparents' health are declining, and
I worry about my oldest daughter being so far away from home!
That brought me back to thinking about my father!
How he was there for me when ever I needed to talk
or just be. There were some days, we would just drink our
coffee and do our cross word puzzle in peace
without ever saying a single word.

Holding that skillet in my hand felt pretty darn good!
A peace came over me,
or maybe it was the thought of the ooey-gooey
of that perfect dark chocolate brownie fix.
Either way, this skillet is going to be used
much more, but right now
it's baking brownies!
Dark Chocolate, Caramel-Sea Salt Brownie Skillet with Pecans (adapted from MidWest Living)
Ingredients
1 1/3 cups packed light brown sugar
1 cup all purpose flour
1/2 cup unsweetened cocoa powder
3/4 tsp baking soda
1/2 tsp salt
1 cup pecans, coarsely chopped
1/4 cup butter, unsalted
1/2 cup packed light brown sugar
1/2 tsp. sea salt
1/2 tsp. sea salt
1/2 cup heavy whipping cream
2/3 cup unsalted butter, melted
4 eggs, lightly beaten
1/4 cup heavy whipping cream
6 oz dark chocolate chips
Vanilla ice cream (optional)
Directions
1. Preheat oven to 325F. Heat a 10x2-inch cast-iron over medium-high heat.
Toast chopped pecans in skillet for 2-3 minutes, until lightly toasted.
2. In a mixing bowl, combine the brown sugar, flour, cocoa powder, baking soda and salt.
3. To the pecans, add the butter and brown sugar. Just as the brown sugar is almost melted, and the butter starts to bubble, add the 1/2 cup heavy whipping cream and the sea salt. Stir until the caramel is well combined, return to heat until the brown sugar is completely melted, and then remove from heat.
4. To the flour mixture, add the melted butter, eggs, heavy cream. Fold in the dark chocolate chips.
Spoon over the pecans and caramel.
5. Bake in oven for 35-40 minutes. Serve warm with vanilla ice cream.
