Everyday Detox by Megan Gilmore and Cheesy Jalapeno Casserole

Happy Wednesday! How is your week going? My week has been going pretty good so far! Today I am excited to share with you a book on a subject that I'm learning more about; Detoxifying my body, with a cleaner eating lifestyle.


For me, the word diet does not mean cutting calories, or any other fad eating meal plans, that promise you will lose weight if you eat more protein, or eating less carbs, and I'll be honest, the idea of eating only fruits, vegetables, soups and salads all day does not appeal to me either.It's funny that I received this book, and my brother in law was looking for more information on detoxifying. I'm only slightly skeptical on the whole idea of clean eating for as little as three days. I did try Dr. Oz's 3 day Detox and I did feel better it's just that going to school for my Nutrition's degree, I lean more to eating a well balanced diet, cutting out all the chemicals out of the food we eat, eating less sugar, and I'm so happy to see that Organic food is not only becoming readily available, but I've noticed it's not as expensive to eat organic as it used to be, as more people become aware of GMOs and are creating a demand for eating a healthier lifestyle.

First I want to start by saying I am not a doctor, this post is only my review on ( affiliate)
Everyday Detox: 100 Easy Recipes to Remove Toxins, Promote Gut Health, and Lose Weight Naturally !

Here's what I liked about Everyday Detox; even though this book is written with a focus on clean eating, it also gives the options for the recipes to substitute, omitting or adding certain items to make them Gluten Free, Vegan, Dairy Free, Nut Free, Soy Free, or Omnivore friendly by adding a high quality meat to a dish.

The core of this book, is based on my belief as well, that Megan Gilmore points out, "Short term cleanses and detox programs are just another form of procrastination allowing you to avoid the real task at hand~ making lasting life style changes!"

There is a 7-Day Detox menu to jumpstart your detox, full of fresh fruits, vegetables and salad, one day for dinner is a Maple and Mustard Grilled Salmon, personally, I'd be adding more high quality proteins and Gluten Free recipes to the menu. There are some delicious sounding recipes on the Detox menu, like Banana Coconut muffins, Go-To Greek Salad, and Dark Chocolate pudding. Megan also suggests for those with a sweet tooth, that it is ok to indulge in a few pieces of Dark Chocolate with at least 70% cacao.

What I liked best is Megan Gilmore, makes it easy to understand and how to customize each meal, with fruits, non- starchy vegetables, starches, proteins, including nuts, seeds and dried fruit, as well as neutral items, picking one item, except non-starchy vegetables which you would use to fill the rest of your plate. It is very general, but easy to follow, especially when I really don't like cauliflower, or walnuts, what type of high quality meats to use and starches are good for me and my digestion.

Three Things I liked about this book:
  • Simple, easy and quick recipes to follow. No complicated steps or ingredients I don't know the names of. Most ingredients I already had on hand.
  • The photographs are bright, clean and although they are minimalistic, almost rustic and earthy looking, they are very beautiful pictures, that are easy to look at.
  • I love that you can customize your approach to detoxifying, without having to follow a set plan.

  • One of the recipes in the book reminded me of  a comfort food, I would love when my mother made it , was spaghetti squash. She'd always top it with butter, brown sugar and cinnamon. Here I added, jalepenos, goat cheese and cheddar cheese. The jalepenos really gave the squash a kick and the goat cheese calmed it down. My family loved it, and some of you may know, that both my son and husband are Type 1 Diabetics, and some of you may know of someone that is too. In all the years, I'd known that squash is very good for you, I had no idea, just how good. For my son and husband, they pay attention to the amount of carbs, and it's really hard because I am addicted to pasta and fresh baked breads, I could eat them at every meal and every day, when I found out that 2 cups of spaghetti squash has the same amount of carbohydrates that a slice of bread has, I was thrilled. It's easily digested and helps managing their diabetes so much easier.


    Cheesy Jalepeno Casserole (adapted from Everyday Detox by Megan Gilmore)

    1 tsp. of unsalted butter
    1/2 a yellow onion, chopped
    1 small jalpeno, seeded and diced
    1/4 cup soft goat cheese or chevre
    1 cup plain non-fat yogurt
    1 1/2 tsp. sea salt
    1 (3 1/2) pound spaghetti squash, halve and seeded,
    baked for 45-60 minutes in a preheated 400F oven

    1 oz. shredded cheddar cheese
    1 pound of chicken breast, cooked and diced

    1. Preheat the oven to 350F.
    2. Melt the butter in a 10-in skillet, over medium heat. Add the onion and jalapenos and sauté until soft and the onion becomes translucent, about 8-10 minutes.
    3. In a large bowl, mix together the chevre, yogurt, and salt. Add the sautéed onion and jalapeno and stir well. Using the times of a fork, scrape the cooked spaghetti squash flesh, and cooked chicken into the bowl and stir well to mix.
    4. Transfer the mixture to a 3 1/2 quart casserole dish and top with the Cheddar cheese until the edges are golden 35-40 minutes. Serve warm.

    A Week in CASL Photos : June 15- June 21

    Happy Beautiful Monday! Hope you all had a relaxing weekend, spending time with loved ones! Yesterday, while my husband and father-in-law spent most of the day bonding, the girls and I had our own bonding time, watching DIY tween room videos on Youtube. We enjoyed some serious giggle time!
    I've been waiting for my daughter to find out how she would like to transform her IKEA rast dresser, and I think she came up with a cute idea, reminds me of a post I read about, "Chevrons vs. Polka Dots"! Honestly, I couldn't tell you which one she chose. I am only guessing, but she's most likely leaning towards polka dots, but don't quote me on it!

    What I like about doing a Photo365, is that I get to share with you a peek into what my week has been like, and possibly a sneak peek to what next week will bring. I've tried 365 Photo or Daily photo memes several times before, and surprisingly, I am getting farther posting my photos once a week, instead of once a day. It makes a big difference, and it's really nice to look back and see a slice of my day!

    June 15th- Lunchtime...Something light for Summer, mini tomato sandwhiches! Fresh basil, cream cheese, mayo, lemon juice on a toasted slice of baguette! Garnished with some black pepper!

     
    June 16th- Sunny...Just like my day!
     
     
    June 17th- Local...Outside our local Amtrak station, a cool abandoned, old, railcar!
     
     
    June 18th- Sun...We've been getting a lot of it lately! Love how in the late afternoon, how it peeks through the leaves on the tree out front!

    Lemon Creme Brulee Tart

    Have I ever told you the story about the Lemon Meringue pie?

    When I was pregnant with my son I craved lemons of all things!
    If I knew about preserved lemons back then, I would have probably eaten the whole jar!
    Seriously, I would suck the juice straight out of the lemon,
     and not even get that sour look on my face!  

    My husband, worked as a manager at a Bakery restaurant,
     and asked me what he could bring home for me; 
    you know the usual,
    pickles, ice cream,
    a Snicker's bar, pizza!

    Without hesitation, I said I wanted a lemon meringue pie!
    Well he brought me home one, with Meringue thickly piled on a mile high!
    He handed me a fork and we sat and talked about our day
    End of the story, I ate the whole thing!
    It was SO good!



    Last week, while I was waiting at the pharmacy, not once but twice for medication, I once again parked myself in the magazine aisle, and started perusing all the new Summer editions.

    I don't know why, when I think of lemons, I think only of Spring, because I know for a fact I drink my weight in Lemonade here in the Summertime!

    There was this recipe for Lemon crème brulee tart, with Sunflowers and a pretty tablescape, that immediately transported me to a back yard patio, watching the sun set, enjoying a glass of my favorite refreshing beverage, and feel the gentle night breeze, with the heavy, scent of jasmine blossoms all around me!



    The first time I had crème brulee was at the resort in California I worked at.
    I remember the crunch of the carmalized sugar, as I sunk
    my spoon into the heavenly pot of crème.
    It was divine.

    I couldn't help but imagine how much better it would be with lemon!


    This was without a doubt one of the easiest recipes I have made so far.
    I've made home made crusts before,
    and the whole chilling the dough before, and then rolling it out is so very time consuming!
    I don't have time for that right now, I have three children on Summer vacation.

    So, it's a simple shortbread, press in the bottom of a Springform pan, crust recipe,
    and the filling is no cook, just bake for 30 minutes!
    Win-Win situation!
     Plus, my children loved watching their father with a blow torch! =)

    The first bite, reminded me of that Meringue pie my husband brought home for me
    so long ago....
    except this time, it was much more creamier,
    and I thought it would be nice to share with my family (and you)!


    Lemon Crème Brulee Tart (adapted from Epicurious)
    For the crust:
    1 cup all purpose flour
    1 cup of butter (2 sticks) of chilled, unsalted butter, cut into cubes
    1 egg yolk (slightly beaten)
    1 Tbls. sugar
    1/2 tsp. of salt
    1/2 tsp. of pure vanilla extract
    For the lemon pie filling:
    3/4 cup plus 2 Tbls. sugar
    3/4 cup whipping cream
    4 large egg yolks
    2 large eggs
    1/2 cup lemon juice
    1 Tbls. (packed) finely, grated lemon zest
    Lemon slices for garnish
    
    1. Preheat oven to 350F. In a medium mixing bowl, combine the flour, salt and sugar. Make a well in the middle of the flour, to add the egg yolk and vanilla. Cut in the butter, with pastry cutter, until coarse meal forms.
    2. Press into the bottom of a 9-in spring form pan. Bake for 10 minutes. Set aside to cool.
    3. In another medium mixing bowl, combine the 3/4 cup sugar, whipping cream, eggs, yolks, lemon juice and zest. Pour into cooled crust.
    4. Bake for 30 minutes, until filling is slightly puffed at edges and set in center. You can cool it completely, or I like mine slightly warm.
    5. With the remaining 2 Tbls. sugar, sprinkle on the top of pie. If using your broiler, broil tart until the sugar melts and caramelizes, turning the tart for even browning, about 2 minutes. 
    6. Garnish with lemon slices.
    As always, I saved a slice for you!

    A Week in CASL photos June 8- June 14

    Happy Beautiful Monday! Ok, so last week got a little crazy, my husband needs to have his wisdom teeth out, and my daughter had strep throat. We had a birthday party last weekend for my brother and father in law (we kind of celebrate father's day too with that), then my nephew's first birthday party this weekend, and my mother came earlier than expected and stayed a little longer; lunch turned into dinner as well, which made for an amazing visit! Usually when she comes to visit, she stays for a couple of hours, since we've moved, we are now 3 hours away, instead of two, so for her to stay for almost seven hours, you can imagine the amazing quality time, I got to spend with her, and the time she got to spend with her grand children.

    Oh, and the funniest thing, my nephew's favorite gift, wasn't all the toys and presents, it was the balloons. He just couldn't stop giggling and hitting them.

    This week is a little different....I didn't truly follow the prompt for the weekly photos because the prompts were difficult emotions, I followed a few, so this week is a mix of both photo prompts and what I have been up to this week on my blog.

    June 8th- Makes Me happy...Multi-colored roses...The table cloth was made by my Great-Grandmother....I remember running through her garden as a small child, stopping to smell her roses.


    June 9th Disgusting....Do you like okra? Then maybe this will come as a surprise, but guess what
    just looking at okra. creeps me out...Every time I look at it I see a bowl of slimy eyeballs...I love Gumbo...but please, please please Don't put any okra in it..Just makes me sick!! Ugh!!


    Ginger Laphing...Take chicken noodle soup and add Asian flavors, and you have Ginger Laphing. I made this for my family after my husband had a dental emergency and my daughter got strep throat last week. The flavors were delicious, nutritious and very comforting!


    Shibori trend: Last week, I seriously fell in love with Shibori.
    I have been obsessively searching Pinterest and other blogs, to learn more fun patterns to create. Surprisingly, this DIY turned out easier than I expected. 
     

    June 13th....Sadness...It makes me sad to see these lovely peony blooms fade. I wish their blooms would last forever.

    June 14th....On my mind.... For the ten of you that follow my blog, my apologies for reposting this picture, but it was almost 110F yesterday, and well, I've adjusted to the heat, I know this is just the beginning, but to see my mother, melting....well, keeping cool has been on my mind.     Follow Friday #23: Summer Dreaming

     

    Happy Friday! Hope your week has been going well!! I've missed a couple Follow Fridays with Mother's Day weekend, and end of the school year functions; and to be completely honest, my children have been out of school a week. A Week!!! For me, that is so hard to believe that a week of Summer vacation is already gone! This weekend, we're not going anywhere, but I have a few projects, that have been looking me in the eye ever since we've moved, to get them started, so that's what I am going to be doing.

    For Follow Fridays from now on, I think I will be featuring 4 different blogs, one cooking/baking, one gardening, one décor/style, and one crafting.


    If you are looking to add some color to your garden, you will definitely find it here, along with some absolutely beautiful photography! From Roses, to succulents and everything in between. Of course for me it was the roses, I was swooning over every single gorgeous one!

    When I saw this blog, it was as if I had stepped into one of my dreams, to one day not only live in a cottage by the sea, but on the coast of France. I love everything about this photo, it's absolutely charming!

    Sticky Toffee Pudding

    I am so excited today, not just because it's Friday, or that it is the first day of Summer vacation, but that I get to share with you this mouth watering, super moist, made by scratch pudding cake!

    For the ten of you that read my blog, you know me. You know, sweet recipes usually catch my attention, even better still a recipe with a personal story attached to it. At the end of the post I'll post some of my favorites.


    Before I received "Twenty Dinners" ( you can read my review here), I've had some type of Date bread before, and it was alright, nothing out of the ordinary! Flipping through the pages, this recipe literally jumps off the page and pulled me into. The photograph was beautiful, but the story behind the recipe, caught me, and my eyes got kind of misty, how this dessert, when the author got homesick, reminded her of the cake her mother made, and it comforted her.


    If you've spent any time on Pinterest, then you have seen Date energy bites, or Date energy bars, they have wonderful health benefits. Although dates have a high amount of natural fructose, dates are very healthy for you. They are high in vitamins B1, B2, B3, B5, A1 and C, proteins, dietary fiber, iron (11 percent), potassium (16 percent), calcium, manganese, copper, and magnesium. The soluble and insoluble fibers and amino acids present in dates can also help to improve the digestive system.



    One thing about me is I like warm, sticky, gooey desserts! Hot fudge, brownie sundaes, or salted caramel anything, with caramel oozing everywhere. Let me just say a couple of things, first chopped dates are very sticky, and the name of this recipe is an understatement. I was pleasantly surprised just how sticky it was. I understand if you find my food tastes on the strange side, and no longer want to be friends. It was after that one bite, I could see why this is the heavenly, comfort food that it is, and WHY haven't I had it before. When the Holidays come around, this is getting made.


    Even though my grandmother didn't make this specific cake, she made these delightful, very soft, glazed cookies, with candied fruit, and some of the cookies she'd put candied cherries, and others she put dates on top. It's been over thirty years, since I've tasted anything remotely similar to her cookies. In that one bite, it reminded me of Christmas time, as a little girl, enjoying my grandmother's not overly sweet cookies.

    I am forewarning you, this is a very rich, moist cake, and while not sickly sweet, it is on the super sweet side and sticky side!


    Sticky Toffee Pudding (adapted from "Twenty Dinners")
    For the cake:
    6 oz. dates, pitted and chopped
    1-1/4 cup water
    1/4 cup unsalted butter, room temperature
    1 1/2 cups. self-rising flour, sifted
    3/4 cup sugar
    2 tsp. pure vanilla extract
    2 eggs
    For the sauce:
    2- 1/2 cups packed brown sugar
    1 cup heavy cream
    1/2 cup unsalted butter
    2 tsp. pure vanilla extract
    Whipped cream, roasted pecans, Sea Salt; for garnish
    Directions:
    1. Preheat oven to 350F. I use butter to coat the 8x11.5 inch glass pan.
    2. Pit and roughly chop dates. In small saucepan, bring dates, and 1 1/4 cups water to boil. Take off heat and set aside to completely cool.
    3. In stand up mixer, cream together butter and sugar, for 5 minutes, until fluffy. Next time, I want to do this, puree the cooled dates and water.
    4. To the butter/sugar mixture, add 1 egg, and vanilla; completely blend. Scrape down sides of bowl. Add half the flour; scrape down sides of bowl. Then add half the pureed dates and completely blend. Scrape down sides of bowl and repeat.
    5. Pour batter into prepared pan, and bake for 40-45 minutes. Mine took 40 minutes, and it is a pudding cake, so it was a little jiggly, but firm to the touch. Insert tooth pick, it should come out clean.
    6. While cake is baking, make toffee sauce. In medium saucepan, on medium heat, cook together the brown sugar, butter, heavy cream, stirring constantly and boil for 3 minutes. Take off heat, and add vanilla.
    7. Poke small holes in cake, and pour half of the toffee sauce over cake. Reserve the rest to spoon over cake for serving.
    8. Roast pecans in a 275F oven for 5 minutes. Watch carefully, because they can burn.
    9. Garnish with whipped cream, and/or Sea Salt.

    Twenty Dinners by Ithai Schori, Chris Taylor with Rachel Holtzman

    Happy Day before Friday!
     Today , I am excited to share with you this awe-inspiring cookbook,"Twenty Dinners".

    Is the style of your entertaining one, where you want your guests to feel relaxed; that they can step through your door, leave the busyness of the world, to unwind and slow down; where you like to sip a drink, savor a great meal, while enjoying the company of dearest family and friends?
     


    That is the focus of this wonderful cookbook; to not only cook for company, but with them. This is what caught my attention. The writers of this cookbook, one; a member of an Indie rockband 'Grizzly Bear', who learned his cooking techniques from his mother, the other a photographer, who is an ex-chef, that worked in high end restaurants.  With the help of their friends, they put together this cookbook, to evoke the feeling of enjoying the simpler things in life! What could be more simple, than great tasting food and our dear loved ones.
     
    I couldn't wait for the book to arrive, and as I opened it up, I loved it, from the gorgeous photographs, to my favorite thing in the world, is the attaching of a personal story to a recipe. This is what connects a reader and pulls you in, and helps you to feel a part of the author's world.

    3 Things I like about this book:
     
    • If you are like me, and are a more visual person, then the gorgeous photographs will not only make you fall in love with the cookbook, but will really make you feel like you are actually a dinner guest, enjoying the meals before you; from a simple meal like spaghetti and meatballs, and egg framed toast, to comfort food like PorkChops and Charred Applesauce, to meals that sound a little more complicated like Crisp Brick Chicken, but with their techniques, turns an ordinary meal into something extraordinary.
    • Does this happen to you? What do I serve with this and what time of year is the best for this? This book is amazing, because it not only provides full course menus from appetizers to desserts and either with a drink recipe or a wine pairing, but it is divided into the four seasons; for example there is an excellent Summertime grilling menu, with potato salad, hamburgers, and cabbage slaw. Again, simple things, given a great taste.
    • Ok, here's a combo of two things, only because they are both important to me. The recipes, themselves have personal stories attached to them; stories that remind you of home, a comforting meal and of simpler times. I am planning on making, one of the desserts in the book *wink* it's a surprise! Then in the back of the book there is a great resource section of cooking techniques, a list of some favorite cooking tools, how to shop for fresh ingredients, and how to simplify your pantry. Which would it surprise you that I have 4 Pumpkin Spice containers??
