Maple-Cinnamon Apple Upside Down Cake


Happy Monday, everyone! Hope you all had a wonderful weekend! We were expecting to have a rainy weekend, instead we had a sunny one, and it started to rain on Monday!

Let me serenade you, with my best Linda Carpenter singing voice:

 "Rainy days and Mondays always get me down!"

What a better way to pick things up a bit, then to turn the oven on and get baking in the kitchen!
One of my husband's favorite cakes is the Pineapple Upside down cake. So here I am wanting to do something different. Here's the twist, I used apples instead of pineapple.
It took the usual Pineapple Upside down cake to a whole new level.


What better way to warm up a cold rainy day, then an Maple-Cinnamon Apple Upside down cake! I used Gala apples instead of Green, because I like things a little sweeter, and Green apples are just too tart for me.






Topping:
2 medium apples, peeled, cut into 1/4 inch wedges
1 Tbls. lemon juice
4 Tbls. butter
1/2 cup pure maple syrup
3/4 cup light brown sugar, packed
1/2 teaspoon ground cinnamon
Cake:
1/2 cup butter
1 cup light brown sugar, packed
2 large eggs
1 Tbls. pure vanilla extract
2 tsp. cinnamon
2 cups. all purpose flour
1 tsp. baking powder
1 tsp. salt
1/4 cup whole milk
1. Preheat oven to 325°F. Coat the bottom and sides of  9-inch road cake pan with butter and line with parchment paper.

2. Peel 2 apples and slice into 1/4 inch wedges. Arrange slices in bottom of pan. Sprinkle 1 Tbls. lemon juice over the apple slices.

3. In a small saucepan, melt butter over medium heat. Stir in brown sugar, cinnamon, and maple syrup. Pour 1/2 a cup of syrup mixture over apple slices. Reserve the remaining for later. 

4. In a mixing bowl, beat 1 cup brown sugar with 1/2 cup butter, until well combined, and fluffy. Scrape the bowl down with rubber spatula. Beat in eggs, one at a time, scraping down the sides after each egg. Add vanilla. 

5. In a medium bowl, mix flour, baking powder, cinnamon and salt. Set aside.

6. Gradually add flour mixture to flour, sugar, egg mixture. Add milk slowly. Mix until smooth.

7. Drop the batter by large spoonfuls over apple slices, and spread batter until even.

8. Bake for 50-55 minutes, until the top, until toothpick inserted in center comes clean. Cool cake for 10-15 minutes. Once cool, run a knife around sides of pan to loosen cake. Invert cake upside down on plate, and top with remaining maple-cinnamon sauce.

9. Garnish with whipped or ice cream.
