Colcannon and Kale: #FoodieExtravaganza: Move over Mashed Potatoes.....

 
There's a new comfort food in town!

What is Colcannon?

Colcannon is a traditional Irish dish created mostly from mashed potatoes and cabbage or kale. The word colcannon is from the Gaelic "cal ceannann," which literally means "white-headed cabbage." Although it is a  popular side dish served for St. Patrick's Day, it is traditionally served for Halloween. The tradition is to serve colcannon with a ring and a thimble hidden in the fluffy green-flecked dish.  Prizes of small coins such as threepenny or sixpenny bits were also concealed in it.[4]
It surprised me to find out that this creamy dish of deliciousness is made mostly in Fall, during harvesting time of the kale and cabbage, from Fall to Winter. Since this side dish is budget friendly, I'll be making this all year round! The flavor of the shallots and the kale, seriously kick these mashed potatoes up a notch!

 
My favorite potato by far is the Yukon Gold. I love everything about it, it's texture, it's flavor, and of course it's gorgeous yellow color. For this recipe I used two types of potatoes, Russet and Yukon Gold. Instead of onion I used shallots. If you aren't too fond of onion's strong flavor, shallots are wonderful. They have this subtle way of flavoring a dish, without that overpowering onion flavor. 




 


I usually use milk for my mashed potatoes. For this recipe I used cream, but of course you can substitute milk for the cream. The kale I used was the regular organic, green leaf kale. You could really make this recipe interesting by substituting the kale for any number of green leafy vegetables, like collards, any other variety of kale, mustard greens, or cabbage the ingredient Colcannon is traditionally made with.

 
First I peeled and cubed both kinds of potatoes, and placed them in a boiling pot of water. Then, I turned the heat down to medium-high and boiled the potatoes until fork tender about 15-20 minutes. Take the cooked potatoes and drain them with a colander.
 
 
 
In the same pot used to cook the potatoes, melt 5 Tablespoons of butter. Sauté the shallots until softened and translucent 3 minutes. Add the kale and sauté for another 3 minutes. Transfer the shallots and kale to a small bowl. Return potatoes to pot. I used my potatoe masher that I've been using for years. Top the mashed potatoes with the shallots and kale, and fold them in until well blended. Add the milk and cream, continuing to blend to just the way you like your mashed potatoes, super creamy or chunky. I like mine somewhere in between.
 

Ingredients:
1 1/2 pounds russet potatoes, peeled and cubed
1 1/2 pounds Yukon gold potatoes, peeled and cubed
5 Tbls. butter
4 small shallots, chopped
1 cup kale roughly chopped
3/4 cup heavy cream
1/2 cup 2% milk
1 tsp. sea salt
1/4 tsp. freshly ground pepper

1. Placed both kinds of potatoes in a boiling pot of water. Then,  turn  down the heat to medium-high and boil the potatoes until fork tender about 15-20 minutes. Take the cooked potatoes and drain them with a colander.

2. In the same pot used to cook the potatoes, melt 5 Tablespoons of butter. Sauté the shallots until softened and translucent 3 minutes. Add the kale and sauté for another 3 minutes. Transfer the shallots and kale to a small bowl.

3.  Return potatoes to pot. Mash potatoes with a potato masher or a potato ricer.

4.  Top the mashed potatoes with the shallots and kale, and fold them in until well blended. Add the salt and pepper, then the cream first,  adding  enough milk while continuing to blend to just the way you like your mashed potatoes, super creamy or chunky.

Friday Follow #15



Happy Friday friends! I hope you had a great week! I'll admit, this week, was the first week back after Spring break, and I don't know how it is Friday already, but it just flew by! Today we have our final walk through in the new house, and either tonight or tomorrow I am going to take the girls to see Cinderella! I don't know who is more excited me or the girls! Yesterday, I spent part of the day pruning rose bushes, transplanting my first rose bush with the help of Hartwood Roses, and at night I made these scrumptious Lemon tassies!

 
I wait all week for this day! Friday Follow's are one of my favorite post, because I hope it helps you to find new and inspiring blogs to follow! Thanks to Pinterest and Instagram their Inspiration gave me so many ideas, with too many being my favorites, that  I would really love to share them all with you. I just don't want to take up all of your time, so here are a couple to spread the love and inspiration!

 
It's hard for me to choose just one thing I like about this photo! The roses and peonies, the antler, the gold chevron lamp shade, the print on the wingback chair, or even the rug! Cassie's blog is full of fun, color and inspiration! I really love her style!

A Week in CASL photos: March 12- March 18

I am so glad you stopped by to visit me today! What I love about Wednesday is that I get to share with you a peek into what my week has been like, and possibly a sneak peek to what next week will bring. I've tried 365 Photo or Daily photo memes several times before, and surprisingly, I am getting farther posting my photos once a week, instead of once a day. It makes a big difference, and it's really nice to look back and see a slice of my day!



March 12-Details: Here's a sneak peek, at the New knobs I found at HomeDepot for my accent table! She's all painted, my husband refinished the top, and now, I just need to put these beauties on.



March 13 -Colorful: One day when I was grocery shopping, these gorgeous beauties caught my eye. I've always loved gerber daisies, especially pink or coral ones. Since there weren't any of those, these one sure are colorful!

 
March 14-Favorite: Yellow roses...My daughter Katelyn actually took this one, on our recent
 trip to Prescott. I didn't edit it, Google did with something called Auto Awesome. I need to investigate more into it. What do you think about the Grunge Vignette?



March 15- Small: This picture, I snapped on a trip up to Sedona, a while back. Hopefully this year, since the children are older, I would like to take them on a hiking trip up there this Summer. I can't believe I was able to get a picture of the 'lil guy as he zoomed by.


March 16-After: Here's another sneak peek at my accent table, 'After' my husband sanded it for me. Oh yeah, he brought home a belt sander for me, and I did use it. Unfortunately, there were a couple scratches that went pretty deep, and one edge that seriously needed an industrial sander to smooth it out! I can't wait for him to bring it home and put it on my accent table.

March 17- Hobby: I know this is a day late, but if you haven't all ready guessed it I really love to bake! This is what I made for St. Patrick's Day, a Guinness chocolate bundt cake with Baileys Cream Cheese filling!


March 18- Text...Believe it or not, I have always wanted to learn calligraphy. After seeing all the chalkboard inspiration on Pinterest, I am really going to make an effort to learn. I found this printable HERE, of a quote from the New Cinderella movie! Has anyone seen it yet? Thinking about taking the girls to see it this weekend! Very simply stated, but very empowering!!

A Week in CASL photos: March 5-March 11

March 5- Out my window...This is another photo taken by my daughter in Washington, since I would love to see Cherry blossoms out my window. For those of you with snow and ice just melting, Spring is right around the corner!
 
 
 
March 6- Remedy- Last week, was a crazy one, last week of school before Spring break, dentist appointments, just busy, busy....My remedy pretty flowers, a new Spring candle, and Cadbury's cream egg. Yummmm...my favorite!
 
 
March 7- Sweet....When it comes to candy, I'm not a huge fan. I'm more of a chocolate lover. My husband loves Saltwater taffy! One of the things that makes our home happy! Also, I found this Irish Blessing you can find it here! The picture frame I just pained it with Folk Art Metallic paint in 'Emerald Green'!
 
 
March 8- Young- Here is a picture of me when I was 2 with my Grandmother. This was the day my brother was born, and she spent the day with me. Grandma's are the best! One of my favorite times, I also remember baking with her in her small kitchen. She's always been very close to me.
Crazy as it sounds, I am almost the same age as she is here, now, minus the 70s glasses. 

 

March 9- Make...This week I've been busy in the kitchen. One of last week's dinners...Chicken Piccata. I also made my first Guinness Chocolate cake with Baileys cream cheese filling! Again two of my favorite things, chocolate and lemons.

 
March 10- Spring wouldn't be spring without pretty flowers. What a great way to repurpose a wine bottle, to make a vase out of it.
This inspiration came to me from this post on repurposing bottles and jars.
 
 
March 11- My Happy Place- If you all couldn't tell, my happy place is definitely in the kitchen! I would even go so far to call my kitchen my office! It's where I spend most of my day, most of the time with my family. It makes me happy to spend time with all my girls (my son, my family and my friends too) cooking with them, laughing with them, just being together! Chicken enchiladas with salsa verde is on the menu tonight!

Luck of The Irish Guinness Chocolate Bundt cake with Baileys Cream Cheese filling

Top O' the Monday morning to you! Hope you all had a wonderful weekend! It's getting pretty warm here in Arizona, already! It was 80F yesterday, and it is supposed to get to 88F on Friday! It is just too early to be this hot! I was able to get out in the garden this weekend! Found my first rosebud, and planted some cherry tomatoes and basil!

Then later, for the girls, (I've been wanting to see it too) I rented "The Book of Life", with Zoe Saldana and Channing Tatum. Beautiful love story, really funny too!

Today I have for you, a Guinness Chocolate bundt cake, stuffed with Bailey's Cheesecake and frosted with Baileys Creamcheese frosting. Surprised as I was, this is my favorite chocolate cake recipe thus far. I didn't think I was going to like a cake with not just beer, but dark beer in it. Again, surprisingly, the beer gave it a very different, but delicious flavor, my husband said, (in a good way) it tasted like burnt chocolate!

Ok, ok, I know what you are thinking! Yuck,!! Burnt Chocolate!
Yes, burnt chocolate, but in a good way!
Like the crunchy corners of brownies (if you like the crunchy corners of brownies), chocolate flavor! Now I like my brownies fudgy, so even for me I really liked the flavor of the cake too. It reminded me slightly of molasses.

It was also, very moist, with the perfect amount of sweetness (since the frosting is sweet enough)!!



When I was cutting the cake, I would have liked to have seen more cheesecake than cake, so maybe when I update this recipe, I am going to adjust the amount of cake by half, and double the cheesecake, and share two versions.


What would make a really pretty centerpiece,
adding some green carnations in the middle of the bundt cake!


Sparkly, green sprinkles, are just as pretty!


The frosting was perfect! It was smooth and creamy with a hint of Baileys! Not strong at all!

Guinness Chocolate Bundt cake with Baileys cream cheese filling

For the cake:



  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 1/2 cup unsalted butter
  • 1/4 cup sour cream
  • 1 teaspoon vanilla
  • 3 large eggs, slightly beaten
  • 1 cup Guinness or other dark, stout beer

  • For the Filling:



  • 1/4 cup sugar
  • 8 ounce package of cream cheese, softened
  • 4 tablespoons butter, softened to room temperature
  • 1 large egg
  • 2 tablespoons Bailey's Irish Cream

  • For the Frosting:
    • 8 ounces cream cheese, at room temperature
    • 4 tablespoons butter, softened to room temperature
    • 4-5 cups powdered sugar
    • 3 tablespoons Bailey's Irish Cream
    Directions:
    Cake:
    1. Preheat your oven to 350 degrees F. Coat, 12- cup bundt cake pan with butter.
    2. In a small saucepan, melt butter, over medium heat. Add the cup of Guinness. Bring to boil, and then remove. Whisk in the 3/4 cup cocoa powder, until smooth.
    3. Sift together flour, sugar, baking soda, and baking powder. In a mixing bowl, add the flour mixture and then the beaten eggs. Mix together, until well blended. Add sour cream and the vanilla. Scrape down sides of bowl.
    4. On low speed, add the chocolate mixture in slowly, until well blended. Scrape down sides.
    5. Pour half of the cake batter for the bottom of the cake in the bundt pan. Reserve the other half for the top layer.
    Filling:
    1. In a mixing bowl, beat together the cream cheese and butter, until fluffy.
    2. Add the sugar, mix until all of sugar is incorporated. Scrape down sides of bowl.
    3. Beat in egg. Scrape down sides of bowl.
    4. Add Bailey's and mix until well blended and smooth.
    5. By cup full, add to cake layer. Spread around cake pan.
    6. Top with reserved half of cake batter.
    7. Bake for 55-65 minutes.
    8. Set aside to cool for about an hour. Carefully run a knife around the edges. Invert on plate.
    Frosting:
    1. In a medium mixing bowl, add together cream cheese, butter, and Bailey's. Gradually add powdered sugar, mixing well until blended together smoothly. Use immediately, or can be stored covered in fridge for a week. When using from fridge, soften to room temperature.
