Glazed Lemon Zucchini Muffins

Happy Day before Friday! How has your week been going? It's been a fun week around here, with all new exciting things planned for the upcoming weeks. I am headed up North to visit family, this weekend. My grandparents have been moving, and should be moved in by Friday. When I visit Saturday, I am planning on taking my Grandmother to lunch and Antique shopping to give her a break from moving. My Uncle and Aunt are helping with the move, and visiting from California, who I haven't seen, since my cousin got married three years ago, which will be nice to catch up with them.

A Summer would be incomplete without a recipe devoted to one of Summer's most beloved vegetables, the Zucchini. 
It is one of the most versatile vegetables to create just about any type of meal and
 even dessert imaginable.

Growing up, I was like my daughter yesterday, when I told her, 
I wasn't going to make cake or dessert,
that I was going to make Zucchini Muffins.



She looked straight at me, and told me that was just wrong,
to put a vegetable into something sweet.
I told her, I could have kept it a secret, and not told her!
Which is what my mother did!

We always had a salad or a vegetable growing up on our plates, and
my mother never really sauteed zucchini, I wouldn't have eaten it
instead she would simply grate it, 
and squeeze lemon juice on it, 
with a little salt and pepper, and never tell me what it was, just too try it.
I loved it!
 
My love of zucchini continued when my mother would make her Zucchini bread. 
It wasn't sweetly glazed with lemon sugar, 
instead she'd add raisins and walnuts.


These Zucchini lemon muffins, were surprisingly a hit with the family!
My son, ate his and all he could say was that they were interesting!
My daughter, kept insisting she wasn't going to eat a single one,
finally she gave in, and ate one up in two huge bites!

What I love about them, is that they were not only 
light and full of lemony goodness,
but were just the right amount of sweetness, 
with a slight hint of cinnamon!

 
Glazed Lemon Zucchini Muffins
 
2 cups all purpose flour
3/4 cup granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
zest of one lemon
1/2 cup butter milk
1/3 cup vegetable oil
1 tsp. pure vanilla extract
2 eggs, slightly beaten
1 cup shredded zucchini
 
Glaze
1 1/2 cups powdered sugar, sifted
2 tsp. fresh lemon juice
2 Tbls. milk
 
Instructions:
 
1. Preheat oven to 350F. Grease well or paper-line 12 (2 1/2-in) muffin cups.
2. Combine flour, sugar, baking powder, salt, cinnamon, lemon zest in a large bowl;
Combine buttermilk, oil, eggs, and vanilla in small bowl until blended. Pour buttermilk mixture into flour mixture. Mix until well combined. Add zucchini, stirring again, until well combined.
3. Spoon into prepared muffin cups, 2/3 of the way up. Bake 20-25 minutes or until toothpick inserted in center comes out clean.
4. Remove from pan, and place on rack to cool.
5. Combine powdered sugar, lemon juice and milk in small bowl, and stir until smooth.
6. Drizzle over warm muffins.

Fresh herb Potato salad with Bacon


Happy day before Friday! How has your week been going? Ours is cooling down a little. With that heat wave last week, we didn't really go anywhere, except the library, or make anything, except more ice cream. Which reminds me, be sure to check back here on July 1, if you are looking for ice cream!
Lindsay's been busy making pom-poms, she's always loved using scissors to cut, and this was the perfect craft for her! It's amazing how $2 worth of yarn, can keep a child happy for hours. Not to brag, but this past weekend, it hit 115F here in Arizona, and the past two days it's come back down to under 110F, thank goodness. My mother in law just got back from California, and was telling me how bad the drought really is over there, the rolling green hills near Riverside, aren't green anymore, and the fires in Big Bear. I'm not really complaining about the heat, but it really does make me feel like I'm baking in an oven, everytime I step outside, not to mention, my poor plants, both my mint and basil, died. This will all change, when the monsoons come next week!

 Next weekend, for the 4th, we are going to a picnic up with my family, and I told my mother, I would bring potato salad. My nana really made the best potato salad, I know she only put onion, mayo, and potatoes, then she salted the potatoes when she boiled them, but she never added any additional salt, because she said, she let everyone put on as much or as little salt as they wanted. It was just simple and it was delicious. Now, my mother and mother in law, they toss different things in, like pickles, mustard, eggs, and celery, and they are both really good, but I wanted something a little different.


In the Summertime, I especially like to cook with fresh herbs, basil is my favorite, but with my plants dying in this heat, dill came to the rescue! My favorite flavor combination is with dill and lemon. Lindsay was having fun playing with the dill, running it through her fingers, telling me how soft and feathery it is! It is a very pretty herb, and very fragrant. Oh, how I love the smell of fresh dill.

 
Nana, was right about the salt, like she was right about everything! I forgot to salt my potatoes one time while I boiled them, not any amount of salt you put on them made them taste right! For this salad, I wanted to add something salty and crunchy, to get it that extra wow flavor factor, and bacon seriously adds that to anything. I just happened to have half a pound on hand.
 
Just as I finished cooking the bacon, it seemed like everyone flocked to the kitchen wanting a slice. I have to fight them off with my wooden spoon, telling them if I gave them a slice there wouldn't be any for my potato salad. They all gave me those sad puppy dog eyes, so I gave in, but only half a slice I said!
 
About the potatoes, this may seem weird, but I like russet potatoes for making mashed, and red potatoes for potato salad. I know I'm picky, but russet potatoes, seem more startchy and sticky, perfect for mashing, I like my potato salads, not so sticky. Maybe that's why I loved Nana's so much, she always used red. Anyways to each their own, right?!
 
Adding the lemon juice, was the best part of this salad, really! Something about lemons, that I love so much, it has this way of brightening up a recipe, waking it up. One bite, and my husband, told me he really liked it. The one thing I would change, and I know this is one thing that there are half of you that are team mayo and the other half are team yogurt. I happen to be team yogurt, and my husband is team mayo, as are the rest of my family, but I would use yogurt.
 
The final taste is extraordinary with all of these wonderful flavor combinations, not only was I pleasantly surprised how this potato salad turned out, but that it was something that my family enjoyed, as my children aren't big on potato salad, but once they got to see what goes in it (bacon), they loved it.
 
 
Fresh Herb Potato Salad with Bacon
 
3 pounds red potatoes, quartered
1/2 tsp. salt
1/2 pound of bacon, cooked and chopped
1 cup fresh dill, or other herbs like basil, chives chopped
1/2 cup mayonnaise
1 Tbls. lemon zest
the juice of 1 lemon

1.  Place the potatoes into a large pot, add salt and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until fork tender, about 20 minutes. Drain.

2. Mix the chopped bacon, fresh herbs, mayonnaise, lemon zest and juice together in a bowl. Set aside.

3.  Once the potatoes are cooled, cut them into chunks. I then cover them, and put them in the refridgerator to cool about half an hour or overnight.

4. Add the bacon, herb and mayo to the potaotes and toss until well combined.

Lemon Creme Brulee Tart

Have I ever told you the story about the Lemon Meringue pie?

When I was pregnant with my son I craved lemons of all things!
If I knew about preserved lemons back then, I would have probably eaten the whole jar!
Seriously, I would suck the juice straight out of the lemon,
 and not even get that sour look on my face!  

My husband, worked as a manager at a Bakery restaurant,
 and asked me what he could bring home for me; 
you know the usual,
pickles, ice cream,
a Snicker's bar, pizza!

Without hesitation, I said I wanted a lemon meringue pie!
Well he brought me home one, with Meringue thickly piled on a mile high!
He handed me a fork and we sat and talked about our day
End of the story, I ate the whole thing!
It was SO good!



Last week, while I was waiting at the pharmacy, not once but twice for medication, I once again parked myself in the magazine aisle, and started perusing all the new Summer editions.

I don't know why, when I think of lemons, I think only of Spring, because I know for a fact I drink my weight in Lemonade here in the Summertime!

There was this recipe for Lemon crème brulee tart, with Sunflowers and a pretty tablescape, that immediately transported me to a back yard patio, watching the sun set, enjoying a glass of my favorite refreshing beverage, and feel the gentle night breeze, with the heavy, scent of jasmine blossoms all around me!



The first time I had crème brulee was at the resort in California I worked at.
I remember the crunch of the carmalized sugar, as I sunk
my spoon into the heavenly pot of crème.
It was divine.

I couldn't help but imagine how much better it would be with lemon!


This was without a doubt one of the easiest recipes I have made so far.
I've made home made crusts before,
and the whole chilling the dough before, and then rolling it out is so very time consuming!
I don't have time for that right now, I have three children on Summer vacation.

So, it's a simple shortbread, press in the bottom of a Springform pan, crust recipe,
and the filling is no cook, just bake for 30 minutes!
Win-Win situation!
 Plus, my children loved watching their father with a blow torch! =)

The first bite, reminded me of that Meringue pie my husband brought home for me
so long ago....
except this time, it was much more creamier,
and I thought it would be nice to share with my family (and you)!


Lemon Crème Brulee Tart (adapted from Epicurious)
For the crust:
1 cup all purpose flour
1 cup of butter (2 sticks) of chilled, unsalted butter, cut into cubes
1 egg yolk (slightly beaten)
1 Tbls. sugar
1/2 tsp. of salt
1/2 tsp. of pure vanilla extract
For the lemon pie filling:
3/4 cup plus 2 Tbls. sugar
3/4 cup whipping cream
4 large egg yolks
2 large eggs
1/2 cup lemon juice
1 Tbls. (packed) finely, grated lemon zest
Lemon slices for garnish

  1. Preheat oven to 350F. In a medium mixing bowl, combine the flour, salt and sugar. Make a well in the middle of the flour, to add the egg yolk and vanilla. Cut in the butter, with pastry cutter, until coarse meal forms.
  2. Press into the bottom of a 9-in spring form pan. Bake for 10 minutes. Set aside to cool.
  3. In another medium mixing bowl, combine the 3/4 cup sugar, whipping cream, eggs, yolks, lemon juice and zest. Pour into cooled crust.
  4. Bake for 30 minutes, until filling is slightly puffed at edges and set in center. You can cool it completely, or I like mine slightly warm.
  5. With the remaining 2 Tbls. sugar, sprinkle on the top of pie. If using your broiler, broil tart until the sugar melts and caramelizes, turning the tart for even browning, about 2 minutes. 
  6. Garnish with lemon slices.

Why Lemon Poundcake is more tempting than Cinnamon rolls!




When it came to what to bake for our upcoming Easter lunch or dinner,
 I knew, without a shadow of a doubt it had to be made with lemons.
I love the smell of fresh citrus!
The tang of real lemon juice,
and how as crazy as it's sounds I love when it
has that sourness that makes my mouth pucker!
For me it was an easy choice; the lemon poundcake!
Only because I eat cinnamon rolls once a year on
Christmas Day!
(butter, sugar, and eggs)
This is because, growing up we did with what we had.
For breakfast, we didn't have jam, unless it was mom's strawberry jam that she made
but we had sugar and we had cinnamon.
So every morning, that's what my brother and I grew up on, Cinnamon-Sugar toast.
Fast forward twenty years, when I was pregnant with my son, my husband brought home a Lemon meringue pie for me; just for me!
And I did, I ate the whole pie! Don't judge me, this is one thing my son and I love to do together now,
is enjoy a slice of lemon pie together.


And now it gets even better, because my husband's favorite treat in the Summer time is Frozen, yes Frozen,
Not the "Let it Go, Let it Go", Frozen, but stick the pound cake in the freezer until it's Frozen
poundcake.
Again, I love pound cake, don't get me wrong, but for me Lemon is the Wow factor in my poundcake!

Putting twists on recipes is what I like best, something different to try!
Has anyone heard these song lyrics before...
"Put a lime in a coconut..."
So that's just what I came up with; and the only way this recipe will give you a stomach ache, is if you eat it all up!
Lemon Poundcake with Lime-Coconut glaze!
It's luscious.
It's lovely,
and best of all it's lemony!
That is why Lemon Poundcake is better than Cinnamon rolls!
 Yay or Nay!
Here I've saved a slice for you!
Lemon Poundcake with Lime-Coconut glaze (adapted from Land O' Lakes)

Cake



2 cups sugar
1 cup unsalted butter , softened to room temperature
4  Eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk (I used milk, and 1 Tbls. of lemon juice. Let that sit for 5 minutes)
1 tablespoon freshly grated lemon zest
1 tablespoon fresh lemon juice

Glaze

1 1/4 cups powdered sugar
1 Tbls. lime juice
1 to 2 tablespoons water
1/4 cup sweetened coconut, toasted
Zest of one lime

Directions



1. Preheat oven to 325°F. On a baking sheet, spread coconut out in a thin layer. Toast for 5-10 minutes. Check often, ( I did about every 2 minutes) and remove the toasted coconut around the edges. Be careful, because it does toast up quickly. Set aside.
 
2. Grease a 12-cup bundt pan.

3. Combine sugar and butter in bowl at medium speed; until creamy. Scrape down sides of bowl. Continue beating, adding 1 egg at a time, until well mixed. Mixture should look creamy, and fluffy.


4. In separate bowl, sift together flour, baking powder, baking soda and salt. Beat at low speed, gradually adding flour;  alternately with buttermilk and then scraping down the sides each time, until well mixed. Add lemon zest and 1 tablespoon fresh lemon juice. Continue beating until well mixed.

5. Pour  batter into prepared pan. The recipe says to bake for 55-65 minutes, mine was finished a little less than 55. I would start checking your cake at 50 minutes, for golden browness, the sides of the cake pull away from the pan, and if the top of the cake, springs back when touched slightly. Cool in pan. Again, very important, wait until the bundt cake is completely cooled, then invert onto serving plate.

6.Stir together powdered sugar, 2 teaspoons lemon juice and enough water for desired glazing consistency in small bowl. Drizzle over cooled cake. Sprinkle with lime zest and toasted coconut.

A Week in CASL photos: March 19- March 25

I am so glad you stopped by to visit me today! What I love about Wednesday is that I get to share with you a peek into what my week has been like, and possibly a sneak peek to what next week will bring. I've tried 365 Photo or Daily photo memes several times before, and surprisingly, I am getting farther posting my photos once a week, instead of once a day. It makes a big difference, and it's really nice to look back and see a slice of my day!

March 20th-  Hand drawn..Since I'm simply not really good at drawing, how about hand "picking'. I just went with one of my day's events. No need to dye eggs...My chickens' eggs today were 3 different and lovely shades of brown. 

March 21st- Sun Flare- Gave it a go! Looks ok for first time!! Although I was seeing sun spots after taking this picture for the next 5 minutes after! If you like photography, here is a Lesson on How to Capture Sun flare in your photographs!




March 22nd- Leaves- Love the pattern on these leaves. Very tropical. This picture reminded me of a container garden, that I wanted to use for our front porch, that contained Red Cannas and Red Dahlias. Look for a post coming up!


March 23- Too Much! This picture if you haven't already seen in an earlier post here, I had too mch Rose Blooms, which actually came in first. Chocolate took the back seat on this one. 


March 24th- Treasure- Not all treasure is Silver and Gold....The time I spend with my family and friends IRL and online...every like...every comment...every moment I spend...I dearly treasure! Since I took a pic of Lindsay for her birthday...Happy Birthday Katelyn 3:16! This was taken last year, at a Horse Ranch in Cave Creek, AZ! The horses name is Albert, and Katelyn was in heaven. So was Albert! Every time Katelyn went to brush his bangs and nose he wanted to take a nap!

Friday Follow #15



Happy Friday friends! I hope you had a great week! I'll admit, this week, was the first week back after Spring break, and I don't know how it is Friday already, but it just flew by! Today we have our final walk through in the new house, and either tonight or tomorrow I am going to take the girls to see Cinderella! I don't know who is more excited me or the girls! Yesterday, I spent part of the day pruning rose bushes, transplanting my first rose bush with the help of Hartwood Roses, and at night I made these scrumptious Lemon tassies!

 
I wait all week for this day! Friday Follow's are one of my favorite post, because I hope it helps you to find new and inspiring blogs to follow! Thanks to Pinterest and Instagram their Inspiration gave me so many ideas, with too many being my favorites, that  I would really love to share them all with you. Chicken Piccata and Visiting Prescott Part 1

Happy Tuesday friends! Hope you all had fantastic weekends! Not to get off topic, but I am learning things about blogging, since this is my second time around. When I first started blogging, I truly felt the need to blog everyday (and I knew bloggers that even posted twice, maybe three times a day), with three small children and a tween, it was a task, that was fun at the beginning, visiting bloggy friends and checking on what was going on in their corner of the blogosphere. Then after a while, I wouldn't say it got harder to keep up, and it wasn't burnout, I think it was just trying to balance family with blogging. I'll admit, that while this is my online journal, and while it's my inspiration, I hope that it also inspires the tens of readers that my small blog has. Even though I really wanted to blog yesterday, it just wasn't meant to be, and I'm ok with that. There is a time and a place for everything, and yesterday's post, is today's inspiration. That your blog is your blog, and you can write when you want, how you want, and those loyal readers will be there for you! With that note, onto today's post!

Today I am sharing our weekend visit up in Prescott, and my search for a rose bush. There are some rose bushes left here in the Valley, but as we get our shipment in at the beginning of the year, by this time, picking are slim, and as I mentioned one of my favorite nurseries in Phoenix, apparently closed at the end of 2014!

Our first stop was Watter's Garden Center. As we walked through the front gates, roses were arranged by color, red, purple, orange, yellow.
My grandmother is wanting a (affiliate) Neil Diamond Hybrid Tea Rose.

 Other than for the obvious reason, that Neil Diamond is one of her favorite singers, this striking rose has stunning blooms with unique speckled and striped patterns of various shades of red, from Cherry, to dark raspberry and then to blush white, or maybe it is the roses sweet fragrance she's after.

For me, my favorite is and always has been yellow roses. This one, I remember in my mother's garden growing up, it always reminds me to keep the 'Peace'!


My daughters and I meandered down the whimsical paths, admiring all the gorgeous and strange plants, I say strange, because in Phoenix, we rarely get to see delicate plants like peonies, camillas, and pussy willow trees, which my daughter, kept running her fingers over the blooms, saying how soft they were, there was even a pink jasmine plant that caught my eye. These plants are chosen by Watters that are specific for Prescott only. The staff at Watters are very helpful and friendly. They also offer Saturday garden classes. My mother even emailed me one of their 'Taking care of roses newsletters'. Other plants we were investigating were all the colors of snapdragons, stock and violas.


Personally, I could buy these plants at Lowe's, HomeDepot or Walmart, for half the price, and as the roses were a little more than I was willing to pay. We left, for our next stop to have dinner with my mom, her husband and my grandparents at Genovese's .

Genovese is a charming fine Italian restaurant in Prescott's town square, specifically on the famous Whiskey Row. It being Saturday night, you can imagine the place was packed. The room was filled with conversations and laughter, as the dining room guests were enjoying not only their delicious meals, but the pleasure of their dinner company! I can't tell you how long it's been since, I had an enjoyable dinner out with family. After we ordered, and around the time our salads were served, that's when the real ambiance started, as the lights were dimmed, as I wasn't able to get a really good picture of my meal. I ordered the Chicken Alba. The chicken breasts were cooked to perfection and covered lightly with a wine sauce that had capers, red peppers, artichokes, and mushrooms. On the side I had large macaroni pasta with the most amazing alfredo sauce I've ever tasted. The only two things, that we had to criticize were the garlic bread, was pretty crunchy, and I am used to ceasar salad dressing being very creamy, and I was surprised when the dressing on my salad was mostly olive oil, with a ton of garlic. Thank goodness my husband didn't come on this trip, because I seriously doubt I'd be getting a kiss good night from him!


My mother's husband ordered the lasagna, Katelyn ordered, the cheese tortellini with marinara, my mom and grandfather ordered pizzas that they bake fresh to order and shared with Lindsay. My grandmother and I have very similar tastes, I almost ordered the exact same thing, except that I had made Chicken Piccata for dinner last week. Of course it came with angel hair pasta, and had a strong lemony flavor, that makes it so wonderful. Dinner was perfect, and the staff were extremely nice and very attentive, making Katelyn's birthday dinner a very memorable one.

For today as well, I am sharing my quick recipe for Chicken Piccata!



Chicken Piccata

Ingredients
  • 1 pound chicken breasts
  • salt and pepper
  • flour for dredging
  • 3 Tbls. unsalted butter
  • 2 1/2 Tbls. extra-virgin olive oil
  • Juice of 1 lemon (more if you prefer)
  • 1/2 cup white wine ( I used chicken stock)
  • 1/4 cup brined capers
  • Pound of pasta, cooked as directed (angel hair, fettuccini, thin spaghetti)
Directions

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium high heat, 1 Tbls. of the butter with half of the olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 5 minutes per side. When chicken is browned, flip and cook other side for 5 minutes minutes. Check the internal temperature of the chicken should be 175F with a thermometer, and the juices should run clear. Remove and transfer to plate.

 Melt the other 1 Tbls. of butter and half of the olive oil. And repeat, cooking the remaining chicken in the same manner.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 1 tablespoon butter to sauce and whisk vigorously. Pour sauce over chicken.
