Churro Cupcakes with Cinnamon Cream Cheese frosting and Caramel filling

My apologies for not making the rounds this week, 
I'm playing catch up today!

Monday, was fun! Lindsay had a school field trip to the Casa Grande Ruins! This Native American 4 story building was built over 650 years ago. We visited the compound, watched a short movie, and toured the museum. I'd heard of the ruins, but when you see it in person, you marvel at ingenuity of the culture that had no modern tools or equipment to build such a building of this magnitude.

Tuesday, my son had a doctors appointment, with a kidney specialist that was an interesting visit. He's had tests that are at first thought look like mild kidney damage from living with Type 1 diabetes for almost 15 years....{how time flies}, and when the kidney specialist runs a simple test in the office, there appears to be nothing wrong with his kidneys! I'm always fascinated with science! Looking at my son he's growing fine {finally}, starting to put serious weight on, because he's eating me out of house and home. The doctor explained his condition happens to non-diabetic teenage boys alike, and athletes that run marathons, and that it could quite possibly be nothing, 
but all the same, she's not ruling anything out!

Then yesterday, I had some insurance details to take care of, that anyone who's dealt with insurance companies knows the run around game. I had eight different people telling me something different, and even the fax number they gave me wasn't the right one, so now I have to email the documents. 

So I am excited to share with you today, something my daughters helped me make for our Thanksgiving brunch, Churro cupcakes. We had the pumpkin, apple, cherry pie twice for Thanksgiving, so I asked the girls what kind of cupcakes they wanted to make, and  I was surprised when they didn't pick anything with chocolate in it! These Churro cupcakes were all the rave and were gone in a flash. Everyone agreed the girls did an amazing job, I just supervised and made the caramel!

If you are a regular reader of my blog, then you know that my twelve year old daughter just recently attended a mock Shark Tank for her school, where the students presented their small business ideas to a panel of judges who offered financial assistance and advice to get their businesses up and running.

Now, Katelyn's new idea involves baking, so she has me addicted to watching Cupcake Wars on Netflix. There was this one cupcake company that stood out to me out of all the 99 episodes I watched.

It was Kastle Kreations , a cupcake Food Truck up in Anchorage, Alaska. They were the Season 9 winners, and her cupcakes were simply the most adorable aquatic cupcakes I'd ever seen.

One of her winning cupcakes, was a Churro cupcake. Who doesn't like Churros? 
Whenever we go to the fair, or Costco, the kids and I love to share one or two or three!!

I only adjusted a few things, but these cupcakes are incredibly delicious!

Churro cupcakes with Cinnamon Cream cheese frosting, 
and Caramel filling (adapted from Kastle Sorensen)

Ingredients: 

Cake Batter:

3 cups all-purpose flour 

1 tablespoon baking powder

1 tablespoon cinnamon, plus more for dusting

1/2 teaspoon salt

1 3/4 cup sugar, plus more for dusting

1 cup unsalted butter, room temperature, plus more for brushing

4 large eggs, room temperature

2 teaspoons pure vanilla extract

1 1/4 cup whole milk

Filling:

2 cups sugar

12 tablespoons unsalted butter, room temperature

1 teaspoon pure vanilla extract

1 cup heavy cream, room temperature

Frosting:

1/2 cup unsalted butter

8 ounces cream cheese

1 teaspoon pure vanilla extract

4 to 4 1/2 cups powdered sugar

1 Tbls. Milk

1/2 Tbls. cinnamon

4 tablespoons unsalted butter

Directions: 

For the cake batter: Preheat the oven to 350 degrees F. Line two 12-cup muffin pans with cupcake liners.

In a medium bowl, sift together the flour, baking powder, cinnamon and salt. In the bowl of a stand mixer fitted with a paddle attachment, cream the sugar and butter on medium-high speed until light and fluffy. Add the eggs, one at a time, beating until just incorporated. Beat in the vanilla. Reduce the mixing speed to low. Add the flour mixture in three batches, alternating with the milk. Beat until combined.

Divide the batter evenly among the lined cups, filling each three-quarters full. Bake until a toothpick comes out clean, 18 to 20 minutes. Transfer to a wire rack and cool completely.

For the filling: Combine the sugar and 1 tablespoon water into a medium bowl over medium-high heat. Constantly stir until the sugar dissolves into a liquid form. The sugar will dissolve and start to turn brown. Once the sugar and water have completely dissolved, add in the butter and vanilla. Slowly whisk in the heavy cream. Let cool for 10 minutes. Refrigerate for 1 hour to let the caramel thicken before using. { I put mine in the freezer for about 20 minutes}

For the frosting: Beat the butter and cream cheese until light and creamy. Add in the vanilla and cinnamon. Add in the powder sugar, 1 cup at a time, incorporating fully before next addition. Add milk as needed if the frosting is too thick. Place the frosting into a piping bag fitted with a large star tip.

Once the cupcakes have cooled, make a well in the center of the cupcake by scooping out the center about halfway down the cupcake, making sure to leave the bottom in tact. Melt down the butter. Mix together some cinnamon and sugar in a small bowl. Using a rubber brush, brush the melted butter onto the cupcakes, then roll the tops of the cupcakes into the cinnamon-sugar mixture. Fill the cupcakes with the caramel sauce. Frost cupcakes with cream cheese frosting, dust with more cinnamon and sugar. If you choose, drizzle the cupcakes with leftover caramel sauce.

Spooky Black Widow Martini and Cupcakes

Happy Thursday friends! Hope your weeks are going great! Getting into the Halloween Spirit, I have to share with you something that just sends a chill up my spine, are not just spiders, but the very dangerous and deadly Black Widow. She creeps and crawls, closer and closer to your heart, and then
just like that she...Wait. thank goodness you're not a male spider, or she would eat you alive!!

I couldn't resist both these fun recipes!



The first is for the Black Widow Martini.
 It sure carries a sting and a seriously delicious Chocolate Orange flavor!
 Made with Vanilla and Chocolate Vodka, Kahlua and Grand Marnier,
it is sure to Party Pleaser!




The second recipe is for my Black Widow cupcakes.
Ever since I can remember Almond Joys have been candy of choice!
Now it's my turn to take a bite out of a Black Widow,
made with Coconut Almond cupcakes, Almond Joys, whipped Chocolate Ganache, 
and Black Licorice.



For the Martini (Makes 2):
First chill a Martini glass. Run a lime around the edges. 
Coat edges with Red Sugar crystals.

In a Martini shaker, pour 
4 oz. cold espresso
2 oz. Vanilla Vodka
2 oz. Kahlua
1 1/2 oz Chocolate Vodka
1 1/2 oz Grand Marnier 
Shake to combine. Pour into martini glass.


For the cupcakes: (adapted from Life,Love and Sugar)
1 2/3 cup all purpose flour
1 cup granulated sugar
1/4 tsp baking soda
1 tsp baking powder
3/4 cup unsalted butter
3 egg whites
1/2 cup Greek Yogurt
1/2 cup whole milk
1 tsp. pure vanilla extract
1 tsp. almond extract
1 tsp. coconut extract

1. Preheat oven to 350F. Line muffin pan with cupcake liners.
2. Cream butter and sugar. Scrape sides of bowl down.
3. Add egg whites, one at a time and beating each until well blended.
Do not over mix.
4. Scrape bowl down. Add extracts and yogurt.
Mix until blended.
5. In separate bowl, mix together flour, baking powder and baking soda.
6. Add half of the flour mixture to the butter mixture.
7.  Mix until blended. Scrape sides down.
8. Add milk and remaining half of the flour mixture. Mix until well blended.
9. Spoon into cupcake liners a little more than half way.
10. Bake for 18-22 minutes.


For the Icing:

I used the Whipped Chocolate Ganache recipe from my Harvest Carrot Cake.
Using (affiliate) Wilton ColorSwirl 3 Color Coupler, 411-1992 ,



I divided the Icing into 3 equal parts.
1 I tinted Black
and
1 I tinted Red,
Keeping one the original Chocolate Ganache.

Then on top of the Cupcake I added a Snack Size Almond Joy, used Black Licorice for legs.
If you can find the Twizzlers Pull Apart Black Licorice.
Finally, I added Red Sparkle Gel for The Black Widow's Diamond of Death!



Here I saved a cupcake for you!

Blueberry-Lemon cupcakes with Lemon Cream cheese frosting

One of my favorite things are lemons. I like my sweet tea with lemon, I love lemon meringue pie, and anything with a lemon-blueberry combination is my absolute favorite of them all.
When I was pregnant with my son I craved lemons like crazy, so much that my husband who worked at a bakery was sweet enough to bring me home a lemon meringue pie. What's even more strange to me, is that my son loves lemons too. Hmmmm...Wonder if there is a connection!!
What I love most about these cupcakes, is first they are made from scratch, and I can adjust the sugar amount. The second is, they are so moist and creamy, and have that lemon flavor I love, making them a perfect teatime or any time treat!

The very first time I made these, they turned out the ugliest color. Not quite purple, not quite blue, almost the color of a really bad bruise. I'm still trying to tweak this recipe, but now, when I make these cupcakes, they have a very pretty blue marble color to them.


Here are three tips I've learned from making these, over and over again.
1. I prefer making them with fresh blueberries, but frozen are fine too.
2. Completely thaw them, if you are using frozen. Then drain them completely.
3. Coat them with a couple Tablespoons of flour. They may look pasty, but this actually help your cupcakes from turning all blue.
Unless, blue cupcakes are what you're looking for, then skip the third step.
For the frosting, I like to use a recipe I learned from my Baking chef. I use with my Buttercream, and Cheesecake frostings. It's a 1 to 1 recipe. For example, I used 4 oz of unsalted butter softened, with 4 oz. of  softened cream cheese. Buttercream is the same, I use 4 oz. of Crisco with 4 oz of unsalted butter,softened. This works great, because I can double it or triple it with no guess work.
Guess what I am doing right now as I am writing this post? That's right! Drinking a cup of tea and enjoying one of my sweet Blueberry-Lemon cupcakes!!
Blueberry-Lemon cupcakes with Lemon Cream Cheese frosting
1and 2/3 cup All purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup  unsalted butter
3/4 cup  granulated sugar
1/2 cup  light brown sugar
1 large egg
1/4 cup Greek plain yogurt
3/4 cup  whole milk
2 teaspoons pure vanilla extract
Zest from 1 lemon
1 teaspoon lemon juice
1 cup fresh or frozen blueberries ( I thawed mine, for the marbling, if you are wanting a whiter cupcake do not thaw)
Frosting:
4 oz. unsalted butter, softened to room temperature
4 oz. cream cheese, softened to room temperature
zest of 1 lemon
1 teaspoon lemon juice
3 cups sifted powdered sugar
2 Tablespoons whole milk
1 teaspoon pure vanilla extract
Preheat oven to 350F degrees. Line muffin pan with cupcake liners.
  1. In a separate bowl, mix the flour, baking powder, baking soda and salt together.
  2. In a mixing bowl, I creamed the butter and the sugar, until they are well combined, and look soft and creamy.
  3. Then I add the egg, lemon juice, lemon zest, milk, vanilla, and yogurt. Mix until well combined.
  4. After that, add the flour slowly. The batter will be somewhat thick.
  5. If your blueberries are thawed, drain them.
  6. For both fresh and frozen blueberries, before folding them, coat them in a couple tablespoons of flour.
  7. Then fold blueberries in gently.
  8. Bake for 15-18 minutes. Until the tops spring back when lightly touched, or insert a toothpick to see if it comes out clean

For the frosting:
  1. Beat the butter and cream cheese together on medium speed, until they are well combined and look smooth and creamy. Stop and scrape down the sides of the mixing bowl.
  2. Add the lemon zest, lemon juice, and vanilla. Beat together, until well combined.
  3. Add the powdered sugar slowly. Stop and scrape down the sides of the mixing bowl.
  4. Mix 1 Tablespoon of milk. If frosting is too thick, and another Tablespoon of milk.
Frost completely cooled cupcakes, immediately. I used, Wilton's 1M tip.
Garnish with blueberries.
